Ingredients:
1 cup flattened rice (poha)
1 tablespoon radish microgreens (fresh)
1 tablespoon oil or ghee
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 small onion, finely chopped
1 green chili, slit
1/4 teaspoon turmeric powder
A handful of curry leaves
1 small potato, diced (optional)
Salt to taste
1 tablespoon peanuts (roasted)
Fresh coriander leaves for garnish

Instructions:
Rinse Poha: Wash the poha under running water in a strainer. Set it aside to soften for about 5 minutes.
Prepare the tempering: In a pan, heat oil or ghee. Add mustard seeds and cumin seeds, and let them crackle. Then, add curry leaves, green chili, and onions. Sauté until the onions turn translucent.
Add potatoes and turmeric: If using potatoes, add them now and cook until soft. Add turmeric powder and stir well.
Mix Poha: Gently mix the softened poha into the pan. Stir well to combine all the ingredients, and cook for 2-3 minutes on low heat.
Add microgreens: Just before turning off the heat, stir in fresh radish microgreens. This ensures they retain their crunch and nutritional benefits or sprinkle them fresh with coriander.
Garnish and serve: Garnish with roasted peanuts, fresh coriander, and a squeeze of lemon juice. Serve hot with lemon wedges on the side.
